RECIPES:
Rice and peas
1 cup rice
1 TBS olive oil
1 onion
Salt and Pepper
Soak the rice in hot water for half an hour. Cut the onion onto strips quartersers, fry in olive oil on a medium heat, add the rice and let it coat in oil. Lower the heat to medium low. Add salt and pepper, garlic powder (optional) and 2 cups of hot water, cover and let cook for 15-20 minutes.
in the meantime make the peas:
1/2 a can peas
1-2 cloves of garlic
1 TBS olive oil
2 TBS tomato paste
In a small pot heat the olive oil, add the garlic, add the peas, stir a bit and add the tomato paste and some water. Mix till combined and add spices - paprika, salt, pepper, garlic powder, a bit cumin and garlic powder, let it simmer for a few minutes.
Chickpea Curry
2 potatoes
1 sweet potato
1 zucchinni
1 can chickpeas
1 onion
1 lime (optional)
20 ml massaman curry paste
250 ml coconut milk
1 chili pepper
1 sprink onion
25 gr peanut butter
200 ml vegetable stock
cut the zucchini, potatoes and sweet potato into small cubes, bake for 20-25 min on 200 degrees, season with salt and pepper and drizzle some olive oil on top. Sieve the chickpeas from their liquid, cut onion into strips, fry in oil, add the chickpeas stir and fry for a few minutes. Add the curry paste stir and fry till everything is covered with the paste, add the stock and stir again, cook 5 minutes. Add coconut milk and peanut cutter, mix well, cook 5 minutes until it thickens a bit. Add lime juice from a quarter of a lime. Add salt and pepper and stir. Add the baked veggies, mix and serve.
Tofu Stir Fry
200 gr tofu
Broccoli
2 carrots
10 mushrooms
1 onion
1 clove of garlic
chili pepper
Fresh ginger
120 gr rice noodles
Cut the tofu into cubes, dry in a paper towel, fry on a dry pan and put aside. Blanch the broccoli. Fry in 1 tsp sesame oil the chopped garlic, ginger and chili, add onion strips, and fry some more, add vegetable oil if needed, add the carrots strips, add broccoli florets and mushroom large cubes.
Make the sauce:
Mix 1 TBS peanut butter, 1 TBS lemon juice, 1 TBS sou sauce, 1 tsp sesame oil, 1 tsp sriracha, 1 tsp maple syrup, 1 tsp hoisin sauce and some water to balance. Add the sauce in the pan, add the tofu and rice noodles and mix well gently. Serve

Vegan chocolate cake:
120 gr sugar
175 gr flour
40 gr cocoa powder
1/4 tsp salt
1 tsp baking soda
240 ml almond milk
1 tsp vanilla extract or paste
120 ml vegeteable oil (I used melted coconut fat)
Preheat ovet to 180 c.
Sieve dry ingredients and mix. Mix the wet ingredients, add it to the dry mixture and fold using a spatula. Move the a 20 cm square pan lined with parchment paper, bake 25-30 min.
Make the frosting:
80 gr icing sugar
3 TBS cocoa powder
1/2 tsp maple syrup (can be omitted as well)
2 TBS almond milk
Mix together till combined. If you want it sweeter or more bitter, play with the cocoa/sugar ratio. Pour onto the cake and enjoy.
