I first tasted a red wine and fig ice cream all the way back in 2002, when I was interning in Bangalore and my brother bought home some ice cream from Cornerhouse (which is a Bangalore dessert institution in itself). It was so good that a whole tub of it barely lasted a day.


Figs and bananas are already a pretty great combination, and I snack of figs so often that it's something that is always stocked up in jars at home, so this seemed like the perfect way to conclude this summer's ice cream season nice cream special month with.


I finally defrosted my fridge, so this time's ice cream held fast and creamy. The red wine in it (I used a Cabernet Sauvignon for this one) also made sure it didn't frost over in the freezer. You could always replace the red wine with some sort of non dairy milk if you want a creamier, non-alcoholic version.


Ingredients
150g Bananas
150g Dried Figs
45-60ml Red Wine (use what you like to drink)
A pinch of salt
½tsp Vanilla Extract
Digestive biscuits for a crumble
