Think soft rice cakes swimming in gochujang broth, perfectly cooked ramen noodles, and that classic Korean street food vibe, all in one bowl. It’s bold, it’s fiery, and it’s the kind of meal you slurp till the last bite!! 😭🤍

It’s tteokbokki ramen
Ingredients
• 4 green onion whites, chopped
• 4 green onions, chopped
• 5 garlic cloves, chopped
• 2 tbsp sesame oil
• 1 tbsp gochujang
• 2 tsp soy sauce
• 1 tsp brown sugar
• 2 ramen noodle cakes
• 1 sachet ramen seasoning
• 2–3 cups hot water
• 1 rice paper + 1 mozzarella stick (per tteokbokki)
• Bok choy, edamame, mushrooms, carrots, chili oil
Method
Soak rice paper in water for 30 secs, place on a board, add mozzarella stick at one end, fold corners and roll. Heat oil in a pot, sauté garlic & onion whites. Add soy, gochujang, and brown sugar; cook 1 min. Add hot water, bring to boil, then add noodles, tteokbokki & bok choy. Simmer 2 mins. Serve broth first, then noodles, then tteokbokki. Top with bok choy, sautéed mushrooms, carrots, spring onion greens, edamame & chili oil (sauté toppings with pepper & soy if desired).
