How to Make Papaya Atchara | Pickled Green Papaya Recipe
Ingredients:
205 grams - ginger
425 grams - assorted bell pepper
600 grams - carrots
2275 grams - green papaya
2/3 cup - salt
1 pc - dried bay leaf
120 grams - raisins
1 cup - peeled shallots
1 cup - peeled garlic
30 pcs - spicy chilis
------------------------
Pickling Solution:
1250 ml - white vinegar
240 ml - pineapple juice
600 grams - brown rock sugar
1/4 cup - black peppercorns

Sterelization:
Jars with lids (washed thoroughly)
Water, enough to submerge jars & lids
(Plastic cannot be boiled for sterelization)

Cooking, mixing & jar storing time approx. 2 hours & 45 minutes
Serving 50+ people
