Still getting through your Christmas leftovers? Here's an easy recipe from Georgia to upgrade the humble nacho.

Serves: 4–6
Total time: 35 minutes

Ingredients

300g leftover turkey, shredded
1.5 tbsp chipotle paste
1 white onion, sliced
100 ml orange juice
1 tsp cumin
1 tsp smoked paprika
300g tortilla chips
150g brie, sliced
75g cheddar, grated
4 tbsp cranberry sauce
4 rashers crispy bacon, chopped
4 tbsp sour cream
25g pickled red onions
10g dill, chopped

Method

1. Preheat the oven to 160°C

2. Shred the leftover turkey and slice the white onion into strips if not already prepared

3. In a pan, heat a little olive oil over medium heat. Add the sliced white onion and cook for 8-10 minutes until its caramelised and translucent. Next add the cumin, chipotle paste and smoked paprika. Next add the orange juice and shredded turkey. Cook for 6–8 minutes

4. In an ovenproof dish, spread the tortilla chips evenly and top with the sliced brie, grated cheddar and pulled turkey mixture. Bake for 10 minutes

5. Once out of the oven, top with the cranberry sauce, sour cream, chopped crispy bacon, pickled red onions and chopped dill
