Today I am sharing the recipe for making Balushahi (बालूशाही) at home

Ingredients :
1). Maida : 2 Bowls
2). Desi Ghee : ½ Bowl
3). Water : ½ Bowl
4). Baking Powder : ½ Tea Spoon
5). Salt : ¼ Tea Spoon
6). Sugar : 2 Bowls
7). Water : 1 Bowl (For Sugar Syrup)
8). Kesar (optional)
9). Cardamom Seeds : 3 Nos
10). Lemon Juice : ½ Tea Spoon

Method:
For making the balushai ,
1). first of all we will prepare the dough. For making dough put 2 bowl Maida in a big bowl.
2). Add baking powder & salt in it.
3). Mix it well.
4). Add ½ Bowl Desi Ghee.
5). Mix it well.
6). Now slowly add water in it & mix it well.
7). Cover the bowl & leave for some while.
8). Meanwhile we will prepare the Sugar Syrup.
9). For Sugar Syrup put Bowl on Gas Stove.
10). Put 2 Bowl Sugar & 1 Bowl Water.
11). Stir it well till sugar dissolves properly in water.
12). Add Cardamom Seeds & Kesar, this will add color & flavor in Sugar Syrup.
13). Now Sugar Syrup is ready. Put off the gas and add some lemon Juice in sugar syrup to avoid formation of crystals.
14). Now take the dough from the bowl and put in the tray.
15). Now with hands press the dough.
16). Now cut the dough from the center and put both pices one above the another.
17). Again press with hands and again cut from center. Again put both side one above the another.
18). Repeat the same 7 ~ 8 times, with this we get the proper layers.
19). Now take the dough, and make roll with hands.
20). Cut the roll into the pices and with hands make it round.
21). with thumb make hole in between.
22). Take a frying pan with with refined oil on gas and put on the gas.
23). Put all the round pcs in the frying pan.
24). Once the pcs come up change the sides as shown in the video.
25). Take the pcs out of frying pan & straight away put in the Sugar Syrup.
26). Wait for 2 minutes. If sugar syrup is less and pcs are not dipped properly then change the sides 2~3 times.
27). After 2~3 mins we will take out from Sugar syrup.
28). Keep it for 1 Hour so that sugar syrup is dried.

Now Balushai is ready to serve.
