Aloo Baingan Gravy Written Recipe With Directions:

Ingredients:
-Onion (piyaz) sliced 1 big size
-Tomatoes (Tamatar) sliced 3
-Brinjal (baingan) 500 g
-Green chillies (hari mirch) 5-6
-Water (pani) 1 glass
-Potatoes (aloo) cubed 3 big sizes
-Cooking oil for frying
-Ginger garlic (adrak lehsan) paste 2 tbs
-White cumin seeds (Safaid zeera) 1 tbs
-Red chilli (lal mirch) powder 1 tsp
-Red chilli flakes (adh khuti lal mirch) 1 tsp
-Turmeric (haldi) powder ¼ tsp
-Salt (namak) 1 tsp or to taste
-Yogurt (dahi) ½ cup (whisk well)
-Ground mixed spices (garam masala) ½ tsp
-Fresh coriander (dhania)

Directions:

-In a wok, add water, onion, tomatoes and green chillies. Cover and boil them for 5-6 min.
-Turn off the flame and let them cool, then grind them in a blender to make a paste.
-In a pan, add oil and heat it. Now, fry the potatoes on a medium flame for 4-5 mins. Then, bring them out on a plate.
-Cut the brinjals with sticks in round shape (or any other shape of your choice)
-Now, on low flame, fry the brinjals for 4 mins. Then, bring them out on a plate.
-In another wok, add the ½ cup leftover cooking oil and ginger garlic paste. Cook until light brown in color.
-Add the prepared paste and cook well.
-Now, add white cumin seeds, red chilli powder, red chilli flakes, turmeric powder, and salt. Cook well.
-Turn the flame to low (dum flame) and add 4 tbs yogurt. Mix it. Cover and cook it for 3 mins.
-Add the fried potatoes and brinjals. Stir the spoon continuously and cook it for 3-4 mins.
-Add ground mixes spices and remaining yogurt.
-Add fresh coriander. Cover and cook it for 12-13 mins on low flame (dum flame).
-Dish out, serve and enjoy with boiled rice or nan/roti.

Tips and Tricks:

-If you want to store potatoes and brinjal for an extended period and then cook them, it's advisable to soak them in water.
