Recipe👇🏻👩🏻‍🍳

INGREDIENT

1 cup milk powder
5 tbsp maida
1 tsp ghee
1 tbsp ghee (for greasing)
2-4 tbsp milk (or more if needed)
1 tbsp curd
1large pinch baking soda
ghee for frying
nuts for decorating

SYRUP

1 1/4 - 1 1/2 cups sugar
1 1/2 cup water
1/4 tsp cardamom powder
1tsp rose water

Method

Prepare the syrup:
Mix water, sugar and cardamom in pot
Boil syrup until it turns slightly sticky
Turn stove off before it turns 1 string consistency (between fingers), if it does, add little water
Add rose water and mix. Set aside and keep hot.

JAMUN BALLS

Fluff up the flour/maida with a fork & measure correctly
Mix flour, milk powder and baking soda in a bowl
Add ghee and mix well
In a small bowl, mix curd and 2 tbsp milk
Pour 1.5 tsp of milk/curd mixture to flour mixture
Begin to bring the flour together to make a dough
If dough is too dry, add little more milk/curd mix until you get a smooth dough, only add as needed
If the dough turns sticky, grease fingers and make a ball
The dough must not be soggy, it must hold the shape well and should be smooth without any cracks
Divide into 14/18 balls of equal size portions, grease handels and roll smooth balls. They must be smooth without any cracks, keep them covered

Cooking Time

Heat up the pan with ghee on medium heat
Check if syrup is still hot, if not, heat a bit, but not too hot!
Check oil temp, small ball must rise slowly without changing colour, it this happens, add the rest of the balls
Make sure the oil is not very hot, else it will brown without cooking. Fry 1-2 mins, regulate flame to low and fry until golden, keep stirring gently
Remove from oil and add them to the hot syrup, allow to rest for 3 hours, serve, garnished with nuts.
