This is Portrush Coffee, created by Jack Weir, head bartender at Belfast’s legendary Merchant Hotel. Inspired by childhood trips up the coast and the unmistakable taste of clove rock, Jack crafted a drink that’s rich, bold, and unmistakably Northern Irish.

Portrush Coffee Recipe 🍀
☕ 30ml Port
🥃 20ml Irish Whiskey
🧊 75ml Cold Brew Coffee
🍬 20ml Demerara Sugar Syrup
🌸 Clove Rock Cream

The secret? Clove Rock Cream. Jack melts traditional clove rock sweets into a syrup and blends it with double cream, creating a pink, aromatic topping that contrasts beautifully with the dark, rich base.

Clove Rock Cream

1. Melt 1 stick of Clove rock in saucepan .Add a little water to help the process.

2. In another bowl or saucepan, heat up 200ml of double cream.

3. Once rock is melted, add just enough of the mixture to (change the colour) to warm cream and mix thoroughly.

4. Leave to cool and set aside. Once cool, put in the fridge, ready to be shaken to thicken it up.

Note : When the rock is melted, it will be extremely hot , be very careful. Make sure the cream is warm or the rock will instantly solidify again once you pour it in.

Why This Cocktail?
On a recent trip to Portrush, Jack ordered a Belfast Coffee—only to be told, “You’re not in Belfast, mate!” So he set out to create a drink just for Portrush—something deep, warming, and packed with nostalgia.
