The cherry harvest this year has been so good that I just had to cook up a whole bunch of things and put them up here.

A good cherry compote is a super versatile thing; you could use it as a filling for a cherry pie, or even as a spread on toast. I'm still considering making another cherry pie video with just pure compote in it, because it tasted so good, and had this beautiful, silky texture to it.

The darker the cherries are, the sweeter they tend to be, and you could actually dial down the amount of sugar you put in it (which is why the 80-100g range). I used a hundred grammes and it actually turned out sweeter than expected, but I paired it with a dark chocolate ganache, which balanced out that sweetness quite perfectly.

While the traditional way does use white wine (I used a Sauvignon Blanc here), you could skip it without a substitute and still end up with a delicious compote. There are many ways to put this to use— I think it'd go quite well with a cheesecake (videos linked above, as always).

Recipe
500g Cherries
80-100g Sugar
100ml white wine
Juice of a lime
½tsp Vanilla extract
1½tbsp Cornstarch
