Mandy Lamb Cooked under Ground Oven - Central Kitchen 2020

We flame up charcoal about 1.5 to 2 hours before we are ready to start cooking meanwhile we add our traditional recipe and special spices to rice.
Now that the charcoal is ready, Place the rice in the oven, on the bottom shelf of the pit and we place the grill and marinated meat over it.
We leave it underground for 2-3 hours to slow cook the meat.
The result is grilled braised Lamb which are roasted underground until tender and falling off the bone, then bathed in the most flavorful sauce, where the rice gets cooked at the same time as the meat, and collects all the juice from the meat. Simply spiced, traditional, and delicious!
It's done!
Finally, we mix the rice together to give it all a smoky flavor then we add the rice layer in the dish and cover it with the succulent lamb to be served immediately!
It's an aromatic and mouthwatering Middle Eastern dish!
