In this episode I make the MOST delicious Roosterbrood burgers from scratch on the braai.

/// ROOSTERBROOD - Makes 16 to 20 buns \\\

1kg White Flour
10g Instant yeast
3 Teaspoons salt
3 Teaspoons sugar (optional)
700ml Warm water
60ml Oil

Add all ingredients together, mix and knead briefly to form a firm ball. Rest the dough in a covered container in a warm area for 40 minutes. Fold dough and rest in the warm place for a further 40 minutes. Fold again and rest for 40 minutes. By now the dough has more than doubled in size. Lightly flour surface as well as the dough and roll out to approximately 3cm thickness. Cut out forms (it can be any shape you like) and place on a floured tray to prove for 15 to 20 minutes. Place the sections on a griddle over active coals (but not too hot) and turn when brown. If it is browning too fast, increase the distance from the coals. The bread is ready once the buns are evenly browned on all sides. Enjoy!


/// BURGER PATTIES - Makes 12 to 16 patties \\\
1.5kg Beef mince
2 Onions finely chopped
Generous salt
Pepper to taste
Swig of Soy Sauce

Combine all ingredients. Form patties about the size of your palm or bigger (they shrink!). Pour a generous amount of oil in a skillet/pan. Once hot, load 3 to 4 patties in the pan. Turn once browned. Brown both sides and remove from the heat. Enjoy!

CARAMERLIZED ONIONS: Chop onions and caramelize in butter, salt and garlic.

BELL/SWEET PEPPERS: Char over open flame, turning continually until all of the skin turns black. Remove from flame and sweat in a closed container. Rub blacked skin off, de-seed and cut into strips.

SWEET CHILLI MAYO SAUCE: Mix mayo (2 parts) with fruit chutney and/or sweet chilli sauce (1 part). Add a good old swig of fermented chilli sauce (I make my own, but Tabasco is good, if you have).
