Recipe:

Streusel

Mix the following
1 tbsp all purpose flour
1/4 cup brown sugar
1/2 tsp pumpkin pie spice
1 tbsp melted butter
once mixed well add
1/4 cup chopped pecans....mix

Dry ingredients:

2.5 cups all purpose flour
2 cups sugar
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1/4 tsp pumpkin pie spice

mix well

Wet ingredients:

1 cup pumpkin puree
1/2 cup vegetable oil
2 large eggs
mix well, then add
2 cups of chopped apples
1/4-1/2 cup caramel bites

mix well
add dry ingredients to wet, mix well.

This recipe will make 24 standard muffins. Spray muffin tins with non stick spray, or use muffin liners.
Fill each muffin tin 2/3 full then place 1 tsp of streusel topping on top, then another tsp of muffin mix on top of streusel.

Bake at 350, 35-40 minutes. Enjoy
