Ingredients:

For the Filling:
5 large Bramley apples, peeled, cored, and sliced
3 ripe pears, peeled, cored, and sliced
Juice of 1 lemon
1/2 cup (100g) granulated sugar, adjust based on the sweetness of the fruit – if using sweet apples 1 tbsp sugar
1 teaspoon mixed spice
1 tablespoon butter for dotting in water
1/2 cup (120ml) water or more
1 tablespoon cornstarch/flour water mixed - slurry

For the Charlotte:
12-16 slices of white bread, crusts removed amount depends on the tin used
3/4 cup (170g) unsalted butter, melted
Additional granulated sugar for sprinkling
Powdered sugar for dusting (optional)
Custard, cream, or whipped cream for serving

Mixed spice
1 tbsp cinnamon
1 tsp Nutmeg
1 tsp allspice
1 tsp ginger
1/2 tsp cloves
1/2 tsp coriander
