Of course, how you pack your kayak depends on your kayak and the trip. With a sea kayak, you'll have hatches for easy access and packing; on some inflatable or sit-on-top kayaks, you might need to strap drybags or add deck bags on top of the kayak. In all cases, make sure your bags are safely secured to the kayak and that your gear is in waterproof storage, in case you were to flip with the kayak. If there are lines or ropes that might be a risk of entanglement, carefully plan to minimize risk and make sure to have a knife or line cutter accessible for safety.
