Our food systems are highly dependent on fossil energy for the production of food on the farm, for the processing, the packaging, the transport of food, and the preservation of food in the cold chain. That is not sustainable.

We need to build much more resilient food systems that bet much more on local diversity than on global supply chains. And that means producing food in ways that require fewer inputs, fewer fertilizers and pesticides that are highly energy intensive.
