Apple Strudel

Puff Pastry:
2 cups flour
½ tsp salt
2½ sticks of butter (20 Tbsp), cubed and chilled
⅔ cup ice water
Filling:
3-4 medium granny smith apples
¾ cup brown sugar
¾ cup golden raisins
2 Tbsp flour
½ tsp salt
Wash:
1 lg egg
1 Tbsp milk

Puff Pastry:
• Mix the flour, salt and butter in a food processor, and pulse until you get pea-sized lumps.
• Place the dough in a large bowl. Add the ice water and stir with a fork until combined.
• Divide the dough in half. Form each half of the dough into a 5” square on a floured surface.
• Using a floured rolling pin, roll the square out into a rectangle, going back and forth only. Fold the rectangle in thirds, turn it 90 degrees, and roll out again into a rectangle.
• Repeat with each dough half about 10 times. Fold into thirds one final time, then wrap each half in plastic and chill in the refrigerator for at least 1 hour.
Filling:
• Preheat the oven to 400°. Line a large baking sheet with parchment or silicone mat.
• Peel, core and coarsely shred one of the apples. Peel, core and slice the other two.
• In a medium bowl, mix together the apples, brown sugar, raisins, flour and salt. Set aside.
• Roll out one of the pastry squares into a rectangle about 10” × 12”. Place half of the filling down one side of the dough, going lengthwise. Leave about a 1” border on the sides.
• Fold the pastry over the apple filling. Dampen the edges with water, and crimp to seal.
• Repeat with the second pastry and remaining apples.
• Place the strudel on the prepared baking sheet, leaving a few inches between each strudel.
• Which the egg and milk together and brush it over the tops of the pastry.
• Cut a few slits on top and bake at 400° for 30-35 minutes, until golden brown.
• Slice and serve warm.
