Crispy Chicken 65 Lollipops – because who said Chicken 65 can’t be fun? 🍗🔥

RECIPE:

Ingredients:
For marination:
• 500g chicken drumettes (lollipop cut)
• ½ cup thick yogurt
• 2 tbsp ginger-garlic paste
• 2 tbsp red chili powder
• 1 tsp turmeric powder
• 1 tbsp Kashmiri chili powder (for color)
• 1 tsp garam masala
• 1 tbsp lemon juice
• Salt to taste
• 2 tbsp corn flour
• 1 tbsp rice flour
• Fresh curry leaves

For coating:
• 3 tbsp corn flour
• 2 tbsp rice flour
• Cooking spray

For tempering:
• 2 tbsp oil
• 1 tsp mustard seeds
• 4–5 dried red chilies
• 10–12 curry leaves
• 3 green chilies (slit)
• 1 tbsp ginger (julienned)
• 3 garlic cloves (sliced)

Instructions:
1️⃣ Shape the lollipops: Push the meat down the drumette bone to form a lollipop. Clean the exposed bone.
2️⃣ Marinate: Mix yogurt, ginger-garlic paste, chili powders, turmeric, garam masala, lemon juice, salt, corn flour, rice flour & curry leaves. Coat chicken well and marinate 2–3 hours (or overnight).
3️⃣ Coat: Roll each marinated lollipop in corn flour + rice flour mix for that extra crunch.
4️⃣ Air fry: Preheat air fryer to 180°C. Spray oil and air fry 18–20 mins, flipping halfway till golden and crispy.
5️⃣ Tempering: Heat oil, splutter mustard seeds. Add dried red chilies, curry leaves, green chilies, ginger & garlic. Sauté 30 seconds till fragrant.
6️⃣ Toss & serve: Pour tempering over hot lollipops, toss, and serve immediately with lemon wedges.
