Mandarin Orange Chicken 橙子鸡
INGREDIENTS
1 lb (455 g) chicken breast or
thigh meat
Vegetable oil for deep-frying

Marinade
2 tbsp soy sauce
2 tbsp Shaoxing wine
1 tsp white pepper
1/2 tsp salt

Batter
2 egg whites
1 tbsp vegetable oil
1/2 cup (60 g) cornstarch

1 cup (120 g) cornstarch for coating the chicken

Orange sauce:
1 cup (240 ml) orange juice
1/2 cup (120 ml) water
2 tbsp rice wine vinegar (or white vinegar)
2 tbsp soy sauce
2 tbsp cornstarch
1 tsp ginger juice
1/2 cup sugar
1 tsp salt
1 tbsp zest of orange
