FLAVORS OF AFRICA SERIES EPISODE 1: NIGERIAN 🇳🇬 BEEF STEW 🍲 I wanted to start off this series with my all-time favorite dish that I love and immediately reminds me of home. You can probably find a pot of stew just like this in every Nigerian’s household 🤣 #FlavorsofAfrica

INGREDIENTS
FOR THE BEEF
1 1/2 pounds of beef stew meat
1/2 white onion, chopped
1/2 tbsp all purpose seasoning
1/2 tbsp thyme
Salt & black pepper to taste
water to cover the top of the meat
FOR THE STEW
1/4–1/2 cup of vegetable oil
5 Roma tomatoes, chopped
2 red bell peppers, chopped
1 medium sized onion, thinly sliced
2 habanero peppers
2 tbsp tomato paste
1 tsp thyme
1 tablespoon African red pepper (or cayenne)
1 teaspoon Accent
1 beef stock seasoning cube
1 1/2 cup beef stock
1 bay leaf
water as needed

DIRECTIONS

1. Heat a medium sized pot over medium-high heat and place the beef and all of the beef ingredients into the pot. Bring the beef up to a boil then reduce to a simmer and cook for 30 minutes until the beef is tender. Remove the beef from the pot and keep the stock to use later for the stew.
2. Air fry the beef for six minutes at 370° or place the beef in the oven to bake at 350° for 10 minutes. Set aside.
3. Blend the tomatoes, red bell peppers, and habanero peppers until puréed and smooth.
4. In a large pot heat up the vegetable oil and add the sliced onions frying just until they turn golden brown.
5. Add the tomato mixture and fry for about 25 minutes until the mixture reduces in size, turns a deep red color, and the oil begins to separate from the tomatoes. Stir continuously to prevent burning at the bottom.
6. Add the tomato paste & beef to the pot and fry for an additional 5 minutes.
7. Add the beef stock and seasonings (dried thyme, red pepper, accent, stock cube, and bay leaf). Stir together, and add more water if needed. (Liquid should cover about 1 inch above the meat). Continue to simmer for 25 minutes, stirring occasionally.
8. Once cooked serve with white rice and fried plantains. 🤤
