DOUBLE CHOCOLATE CHIP COOKIES WITH CREAM CHEESE FILLING RECIPE

Cookie Ingredients:
114 g cold unsalted butter
40 g brown sugar
50 g granulated sugar
2 egg yolks
1 tsp vanilla
130 g plain flour
28 g cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
100 g milk chocolate chips
frozen cream cheese blobs

Cream Cheese Filling Ingredients:
150 g cream cheese
150 g icing sugar
1/2 tsp vanilla extract
1/2 tsp lemon juice

Method:
1. Make cream cheese blobs by mixing cream cheese, icing sugar, vanilla and lemon juice.
Scoop approximately 1 teaspoon of the mixture, place it on a tray, then freeze 7 blobs for an hour.
2. Pre-heat convection oven to 170 degrees.
3. In a bowl, beat butter, brown sugar and granulated sugar.
4. Add egg yolks and vanilla extract.
5. Add sifted flour, baking powder, baking soda, salt and cocoa powder.
6. Stir in milk chocolate chips.
7. With 1 scoop of dough, form cookie ball with frozen cream cheese filling in the middle.
8. Place on a baking tray with baking paper on it.
9. Bake for 15 minutes at 170 Celsius convention oven.
