If there’s one dish that embodies the heart of Puglia 🇮🇹, it’s Orecchiette con Salsiccia e Cime di Rapa. This authentic Pugliese pasta recipe is all about balance. It’s the perfect marriage of handmade orecchiette, crumbled sausage, and the slightly bitter bite of cime di rapa. With garlic, chili, and a drizzle of olive oil, it's an easy weeknight dinner and the perfect Italian comfort food for any occasion. Bringing a piece of Puglia to your kitchen!

Ingredients:
1 lb orecchiette
1 lb sweet Italian sausage
2 heads cime di rapa (broccoli rabe)
2 cloves garlic, minced
1 chili pepper, chopped
Salt & pepper to taste
Olive oil

Instructions:
1. Remove the leaves and buds from the cime di rapa, separating the large stems—nobody wants tough stems in their pasta; they don’t belong in this dish and will only get in the way of the orecchiette and cime di rapa coming together perfectly.
2. In a large pot of salted boiling water, cook the orecchiette and add the cime di rapa leaves and buds a few minutes before the pasta is done.
3. Heat olive oil in a pan over medium heat. Remove the sausage from its casing, breaking it into small pieces, and sauté until browned.
4. Add garlic and chili pepper to the pan, cooking until fragrant.
5. When the pasta is almost ready, transfer it to the pan with the sausage. 6. Add a splash of pasta water, olive oil and let it all come together for a few more minutes.
6. Drizzle with more olive oil, finish with grated cheese, and add in some crushed taralli for an extra crunch!
