Salted Egg Fried Rice
Ingredients
2 salted duck eggs
2 chicken eggs
A bowl of rice(overnight is better)
2 cloves minced garlic
2 slices ginger
2 stick chives
A handful Pine nuts

Seasoning
1 tbsp cooking wine
Salt & pepper (optional)

Cooking Steps
1. Separate the egg white and yolk in different bowls for salted duck eggs and chicken eggs.

1A. For 2 Duck eggs:
1 boiled reserve egg yolks and take away the salty egg white
1 separated egg yolks mashed it and take away the liquidated egg white.

1B. For 2 Chicken eggs:
Fried the egg white and egg yolk separately, and put aside in different bowls

2. Minced the garlic and sliced ginger, and chopped 1 stick chive
3. 2 tbsp oil to stir fry the ginger and 1 stick chive to gain the extravagant oil. Then take out the ginger and chive. Leave the oil in pan and put the mashed salted duck egg yolks. When it’s begins to turn bubbling, add the minced garlic and cooking wine. Keep stirring.
4. Once the alcohol is evaporated, put the rice in pan and mixing together with salted egg yolks.
5. Well mixed, then put the ready chicken egg yolks and egg whites into pan, keep stirring until the mixed rice moisture is dried out.
(Adding more Seasoning: salt & pepper is optional.)
6. Ready to serve, toppings with egg white, sprinkled with chopped chives, pine nuts and sesame seeds.

Tips⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️
1. Secret weapon frying ginger and chives with 2 tbsp oil is a must.
2. Freeze the rice overnight, each of rice will become dry out and won’t be sticky.
3. Cooking wine can enhance the smell, provides more fragrances and taste better.
