Shawarma is one of the famous street food in the middle east. This is the Egyptian version that you can easily make at home. It is usually served in dinner rolls, but you can wrap it in tortillas as well.

Ingredients:
1/2 kg (1 LB) sirloin steak or tri tip or ribeye
1/4 cup finely grated onion with its juices
1 tablespoon white vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon coriander
1/4 heaped teaspoon cinnamon
1/4 heaped teaspoon allspice

Lamb fat could be substituted for: beef fat, ghee or, olive oil
1 Large red onion - sliced
2 tomatoes – medium dice
1/3 cup chopped parsley
4 tablespoon white vinegar

For the tahini sauce:
1/2 cup tahini (sesame paste)
1/4 cup Greek yogurt
2 tablespoon lime juice
2 teaspoon vinegar
1/4 cup cold water
1/2 teaspoon salt
1/8 teaspoon cumin
1/8 teaspoon coriander
pinch of cayenne pepper

Tips:
Egyptian Shawarma is made with lamb fat but I couldn’t find lamb suet where I live so I used beef fat.... You can use ghee or olive oil instead (about 3 tablespoons).
I prefer to mix two tablespoons of the Tahini sauce with the shawerma in addition to the ones I add to the sandwich. Give both a try and let me know which one you prefer more.
