In this video, Chef Bai goes head to head against In and Out and their animal style French fries. It's a fan favorite and for good reason. Fries smothered with onions, cheese, and sauce are what dreams are made of.

This is the Chef Bai Dupe Series, where we talk about the uncomfortable truths about large brands and companies, and what harmful ingredients they are hiding in common menu items. In and Out uses hundreds of millions of pounds of beef and dairy across all their locations, that making the switch to plant based cheeses and meats would cause such a positive social and environmental impact, even if there was just one vegan option. (One could even hope for a vegan burger to be on the menu) But don't worry, while we wait for these brands to listen up, Bai will show you how to make healthier versions at home.

For the potatoes:
4-5 russet potatoes, cut into fries
1-2 tbsp olive oil
1 tsp salt

For the Caramelized onions:
1 tbsp olive oil
2 onions, diced
1 tsp salt
2 tsp water
1 tbsp coconut sugar

For the Cheese sauce:
3 tbsp olive oil
3 tbsp gf flour
1/2 tsp white pepper
1/2 tsp turmeric
2 cup unsweetened plant milk
8 oz vegan shredded cheddar cheese

For the Secret sauce:
1/3 cup vegan mayo or cashew cream
1/4 pickle juice
2 tbsp yellow mustard
1 tbsp agave
1 heaping tbsp tomato paste

The Method:

1. First soak the sliced potatoes in filtered water for 10-20 minutes. Drain the water and pat dry with a large clean kitchen towel. Add the fries into a bowl and season them with olive oil and salt. Add into the air fryer @400 for 15-20 minutes.
2. As the potatoes are cooking, make the caramelized onions. Heat a sauce pan with oil on medium high heat, once hot, add the onions, salt, and sauté for 2-4 minutes. Deglaze with water if needed. Then lower the heat to medium low and sauté for 10 minutes. Deglaze when you need to. Sprinkle the coconut sugar over the onions and cook down for another 2-3 minutes until everything is a golden brown perfection. Remove from heat and set aside.
3. Next up is the cheese sauce. In a medium sized sauce pan, heat olive oil over medium heat. Add the flour and cook for 1-2 minutes while stirring continuously. Next, add the white pepper, turmeric, and plant milk. Stir to incorporate everything, then add your vegan shredded cheese and cook down for 5-7 minutes until all the cheese has melted. When all the cheese is melted and combined, remove from heat and set aside.
4. To make the secret sauce, simply add everything for the sauce into a mason jar and stir until the sauce is smooth. Taste for sweetness.
5. Now the fun part, to build the animal fries! When the fries are fork tender and slightly crispy, add a generous amount of fries onto a plate. Take your cheese sauce and pour a few dollops over the fries, then top with some caramelized onions, and a few scoops of your secret sauce.
6. Enjoy this immediately while everything is still hot!
