Finding the Freshest Eggs with the Julian Date

To get the freshest eggs, check the Julian date on the carton. It’s a three-digit number ranging from 001 (January 1) to 365 (December 31) that shows the day of the year the eggs were packed. This code helps you pick out the freshest eggs at the store.

Understanding Different Types of Eggs
• Organic Eggs: Come from hens fed organic feed and raised without synthetic pesticides or fertilizers.
• Pasture-Raised Eggs: Hens roam outside with access to pasture, leading to a richer yolk.
• Cage-Free Eggs: Hens aren’t kept in cages but may still be indoors.
• Pasteurized Eggs: Treated to eliminate bacteria, making them safe for raw consumption. Note: Pasteurized eggs are not the same as pasture-raised eggs.

Making Tamago Kake Gohan

Here’s how I made it:
• 1 cup of hot rice
• 1 raw egg (pasteurized if you have it)
• A dash of soy sauce
• Salmon roe (caviar from salmon)
• A drizzle of sesame oil
• Chopped green onions
• A pinch of MSG
• Optional: Add chili pepper flakes if you’re nasty 🔥
