Ingredients:
2 1/2 cups flour
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup softened unsalted butter
1 cup sugar
1 room temperature egg
1 teaspoon lemon zest
1 teaspoon lime zest
juice of 1/2 a lemon
juice of 1/2 a lime
1 teaspoon vanilla extract
yellow food colouring
green food colouring
1 cup powdered sugar for dipping

Directions:
whisk together flour, cornstarch, baking soda and salt then set aside
cream together butter and sugar until smooth
mix in egg, lemon zest, lime zest, lemon juice, lime juice and vanilla extract until well combined
slowly add in flour mixture and mix until dough comes together
split the dough in half and mix in yellow food colouring to half of the dough and green food colouring to the other half
refrigerate doughs for 3 hours
roll yellow and green doughs into small balls then gently roll one yellow ball and one green ball together so that one side is yellow and the other side is green
roll cookies into powdered sugar and place on a lined baking tray
this recipe makes about 45 - 50 cookies
bake at 350F for 15 minutes these cookies will spread in the oven
cookies will be soft and cakey
