VEGAN "Scrambled Eggs" (No Tofu!) // Vegan Egg Substitute

Have you used chickpea tofu before?? Today I'm making "scrambled eggs" with the chickpea tofu (from my last video... see link below)! No soy, no tofu, and high in protein! Let's see how they turns out. 🤗

🌱 Chickpea Tofu recipe:
   • Chickpea Tofu?! Soy free, Gluten free...  

✨ Recipe:
400g chickpea tofu
1/2 onion, diced
any veggies of your choice! (I've tried adding spinach and it works great!)
1/2 teaspoon black salt (start with less and add up to full 1/2 t. if needed)
any additional seasoning or garnishes you like (green onion, chives, etc.)
Sauté the onion first in 1 teaspoon of oil (or do a water sauté if avoiding oil). Add the chickpea tofu and black salt and mash the chickpea tofu a bit to break it down. It will become creamy and "melty" if cooked too long, so just cook it until it's heated through. Top with any other garnishes of your choice. Enjoy!
