Today we are making the Penicillin cocktail. A rare cocktail that shines with scotch as the main ingredient! Many may be surprised to know the penicillin cocktail was created in the mid 2000's by Sam Ross while bartending at the legendary Milk & Honey.

RECIPE (syrup recipes below): Penicillin

2oz | 60ml Blended Scotch
.75oz | 22.5ml Lemon Juice
.5oz | 15ml Ginger Syrup
.5oz | 15ml Honey Syrup
*.25oz | 7.5ml Islay Scotch float at the end

Garnish: Candied Ginger

Add ingredients into shaker and shake for 8-10 Seconds
Double strain into rocks glass with large ice cube
Add Float of Islay Scotch
Garnish with candied ginger on pick

ENJOY!


Ginger Syrup: (Morganthaler Method)

1 Cup chopped ginger
1 Cup sugar
1 Cup hot water
Add to blender then filter through a Nut Bag.



Honey Syrup:
1 Cup Honey
1 Cup warm water
Stir warm water into honey until it has a liquid consistency.

*Note: If you like a sweeter, or more honey forward cocktail change your ratio of Honey to water. 2:1 or even 3:1.
