(Serves 2)
3 fl. oz. Hickory & Brown Sugar BBQ Sauce
1 Tbsp. Tomato Puree
1 oz. Shredded Cheddar Cheese
.46 oz. Brown Sugar
.32 oz. Ketchup
2 oz. Baby Spinach
10 oz. Mashed Potatoes
½ oz. Crispy Jalapeños
8 oz. Cooked Sliced Brisket
1 oz. Lite Sour Cream
Turn oven on to 375 degrees. Let preheat, at least 10 minutes.
Make sure to use conventional oven setting, not convection.
Thoroughly rinse any fresh produce and pat dry. Drain brisket
and separate slices.
• In one section of provided tray, combine spinach and 1 tsp.
water. Cover tray with foil. Place tray on a baking sheet. Bake
covered in hot oven until wilted, 10-12 minutes.
• Carefully remove from oven. Add mashed potatoes, sour
cream, and cheese to spinach section. Vigorously stir to
combine. In empty section, combine brisket, ketchup, brown
sugar, tomato puree, BBQ sauce, 1 Tbsp. water, and a pinch of
salt and pepper. Cover tray with foil. Place tray on a baking
sheet. Bake again covered in hot oven until warmed through,
15-18 minutes.
• Carefully remove tray from oven.
• To serve, place brisket on potatoes and garnish with crispy
jalapeños (to taste). Bon appétit!
Hot honey Cornbread (balance & portion control is key. Enjoy a *mindful * sized slice))
1.5 c cornmeal
½ all purpose flour, see notes
2 tsp baking powder
1 tsp sea or kosher salt
1.5 c plain greek yogurt
2 large eggs
¼ olive oil, plus 1 tablespoon for greasing
honey or spicy/hot honey
Heat the oven to 375°F. Lightly mist a 2-quart casserole dish with olive oil cooking spray. Whisk together the cornmeal, flour, baking powder, and salt. In a separate bowl, whisk together the greek yogurt, eggs, olive oil, and honey until smooth. Pour the wet ingredients into the dry ingredients, then fold with a rubber spatula until just barely combined. Pour the batter into the prepared casserole dish and smooth the top using the spatula. Bake until the edges are golden brown, and the center springs back when gently pressed, 20-25 minutes. Remove from the oven and cool in the pan 10 minutes. Serve topped with hot or regular honey.
