Sunday Nostalgia on a Plate! Relishing Sindhi Dal Pakwan - a taste of home, love, and beautiful memories.

Ingredients required:
For dal
Chana dal - 1 cup
Water - 2 cups
Turmeric powder - 1tsp
Green chillies - 1-2
Salt as per taste

For pakwan:
Maida - 2 cup
Wheat flour - 1 cup
Carom seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Oil for moyan - 4 tbsp
Salt - 1 tsp
Water to knead
Oil to fry

For Tempering:
Ghee - 2 tbsp
Curry leaves - 5-6
Cumin seeds - ½ tsp
Red chilli powder - ½ tsp

For Garnish
Garam masala - ¼ tsp
Amchoor powder - ½ tsp
Chopped onion
Chopped coriander
Green chutney
Tamarind chutney

How to make Dal Pakwaan:
1. Wash and soak dal for 1 hour.
2. Add dal, turmeric powder, salt, oil, green chilli and water to a pressure cooker and boil for 3-4 whistles.
3. Heat ghee in a pan. Add cumin seeds, hing; curry leaves and red chilli powder.
4. Add boiled dal, mash and mix well. Cook for 2-3 minutes on sim. Add amchoor powder, garam masala and coriander leaves.
5. Add all the ingredients mentioned for the dough in a large bowl and knead a semi-tight dough. Let it rest for 15 minutes.
6. Divide the dough into small balls and roll each into chapati-sized pooris. Prick them with a fork.
7. Heat oil in a kadhai. Fry the pooris/ pakwan on medium heat till golden and crispy.
8. To serve, take pakwan in a bowl, pour dal over it and top with green chutney, tamarind chutney, chopped onion and coriander and serve.
