KETO CIABATTA ARTISAN BREAD | 生酮夏巴塔拖鞋面包

I don't like to say things like "the best ever…." but one thing I can tell you is this is my most satisfied Keto bread recipe so far. It is my "go to" version for sandwich, toast and taste good even eat plain with olive oil and balsamic vinegar. It's definitely worth all the testing batches and efforts after all. I will share with you all if I work out anything even better in the future but this is the one for now.
Those Keto ciabatta bread has the real artisan bread texture, crispy shell with soft fluffy holes inside. No coconut taste (no coconut flour used) and no sticky psyllium texture ( I've kept it as minimum). The only downside is it does take a bit time to knead and proof, but still easier than making real sourdough isn't it? Plus no gluten, low carb, non fathead but taste as good, what else do you need? :)

Dry ingredients:

12g Whole psyllium Husk grind to powder https://amzn.to/3soGhgQ
30g Golden flaxseed grind to powder https://amzn.to/3pVnRDW
30g Blanched Almond flour https://amzn.to/3gsz8GI
65g Oat Fiber https://amzn.to/3sVlj9q
1/2 tsp salt

1 tbsp Bragg nutritional yeast seasoning (optional) https://amzn.to/3gyxV0v
1/2 tsp dry Italian mixed herbs (optional)

Wet ingredients:

220g Egg white (7 - 8 eggs)
150ml Warm water
2 tsp Dry instant yeast
2 tsp Inulin https://amzn.to/3oKQz9S
1 tsp Olive Oil

Proofing:
1. Proof for 40 mins or until dough doubled in size, fold 4 edges twice
2. Proof for 30mins, fold 4 edges once
3. Proof for another 30 mins, fold 4 edges once.
4. Shape & dust (I used oat fibre) rest for another 10-15mins covered. Then bake.

Dipping:
Olive oil + Balsamic vinegar (optional)

TIPS:
Weight your egg white, I normally use either 7 or 7.5 eggs. It can be different each time depends on the size of the eggs and batch. This dough doesn't have much water, so the amount of egg white will decide how wet/dry the dough will be.
Grind both psyllium husk and flaxseed even if you bought the meal or powder format to ensure you get the consistent granularity.
Knead the dough a bit long until you don't see any lumps in it. It should be smooth just like the normal dough. Using a dough hook on mixer will be easier, it takes longer with only spatula but also doable.
The bread doesn't have any gluten in it, so it's not as stretchable as the normal dough when you fold it. But it should be reasonable easy to operate after the second round of proofing.
You can top up the bread with olives, parmesans or jalapeño to spice it up when baking.

這款生酮麵包是我個人目前最滿意的版本了。沒有椰子味也沒有黏糊糊的口感,外皮硬脆內裡柔軟細膩還有均勻的大氣泡真的可以和普通慢發酵麵包媲美了。麵包的製作過程需要少許耐心但是味道真的值得你期待。實驗過程中每次做出的麵包都吃不到第二天就搶光了,無論是直接沾橄欖油義式香醋,還是用來烤焦塗醬或是夾三明治味道都不會讓你失望。經驗和小細節一次分享給大家找回吃碳水麵包的滿足感😄

乾料:

12g 洋車前子殼研磨粉
30g 黃金亞麻籽磨粉
30g 去皮細杏仁粉
65克燕麥纖維
1/2茶匙鹽

1大匙 營養酵母調味料(可不加)
1/2茶匙幹意大利混合香草(可不加)

濕料:

220克蛋清(7-8個雞蛋)
150毫升溫水
2茶匙幹酵母
2茶匙菊粉
1茶匙橄欖油

醒發面:
1. 發酵 40 分鐘麵團漲大一倍, 4 邊對折法揉麵兩遍
2. 醒發30分鐘,4邊對折揉一遍。
3. 再發酵 30 分鐘,4 邊對折揉最後一次。
4. 直接整形撒乾粉(我用的燕麥纖維粉)醒面 10-15 分鐘然後進烤箱。

提示:
蛋白一定要秤重,我通常會用到 7 到 7.5 個雞蛋。每次用的雞蛋批次大小都會影響蛋清出來的重量所以一定要稱一下。這個麵團沒有太多的水,所以蛋清的量直接影響麵團的干濕程度。
即使您購買的包裝上寫亞麻籽和洋車前子粉或是細顆粒啊還是要研磨一下並且過篩以確保顆粒度是一致的. 視頻中也可以看到我用的是亞麻籽粉打磨過後過篩都還是有少許大顆粒,所以要想麵包口感完美就不要省略。
如果是用刮刀揉麵團時間要久一點不停按壓翻拌直到麵團變得光滑完全融合,看不到裡邊有鼓起大小的包包。用廚師機的和麵功能可以容易一些。
由於麵糰中沒有任何麵筋,所以折疊時它不會像普通麵團那樣有彈性。但經過第二輪發酵後應該操作起來會簡單一些。
麵包烤之前也可以撒上喜歡的芝士或是橄欖,辣椒圈烤出不同風味。
