Recipe for Kerala style Vegetable Stew:
Serves: 2 people

Ingredients:
•Oil (coconut oil preferably) - 2tbsp
•Bay leaf - 2nos
•Cardamom -2 Cloves
•Cinnamon - 2-3 small pieces
•Cloves- 2nos
•Green chilly -as per taste
•Diced Onion- 1 medium size
•Diced peeled potato -1 medium size
•Diced Carrot peeled - 1 medium size
•Few french beans
•Cauliflower - 2-3 tbsp
•Green peas - about 2 tbsp
•Diluted coconut milk - 250 ml
•Thick coconut milk (I have used canned milk) - 150ml
•Curry leaves (Optional)
•Salt - to taste

Method:
1. Take a thick bottomed deep sauce pan.
2. Pour 2tbsp oil (can use coconut oil for better taste, or any other odourless oil)
3. Once oil is medium hot, drop in bay leaves, cinnamon, cardamom, cloves and green chilly. (If you like curry leaves, add it at this time.) Let it sit for 10-20 seconds.
4. Now add onions, french beans, potato, carrots and mix it well. Cook it for 2-3 mins.
5. Now add cauliflower florets and green peas and mix all together, cover & cook for 3-4 minutes.
6. Now add salt to taste and mix it well.
7. Pour in diluted coconut milk and cover and let it simmer for 10 minutes or till all vegetables are cooked.
8. Pour in thick coconut milk, stir it properly & cook for another 30-40 seconds.
9. Stew is now ready to serve. Enjoy it with Steamed rice or Appams.
