Soft, buttery muffins with gooey caramel inside, topped with chocolate chips. Each bite melts in your mouth, rich, nutty, and perfect for cozy baking!

📝 Full Recipe ( 6 muffins)
📌 Ingredients

🔹 For the Muffins:
• 130g (½ cup + 1 tbsp) unsalted butter (to brown)
• 130g (⅔ cup packed) brown sugar
• 2 large eggs + 1 egg yolk
• 120ml (½ cup) milk (room temperature)
• 1 tsp vanilla extract
• 170g (1⅓ cups) all-purpose flour
• 10g (1 tbsp) cornstarch
• 7g (1½ tsp) baking powder
• Pinch of salt
• 6 tsp thick caramel (or frozen scoops)
• 80g (½ cup + 1 tbsp) chocolate chips (some inside + some on top)

📌 Instructions

1️⃣ Brown the Butter:
• Melt the butter over medium heat, stirring often until golden brown and nutty. Be careful not to burn it.
• Pour into a bowl and let it cool until it thickens slightly and looks creamy. This is key for soft, rich muffins.

2️⃣ Prepare the Batter:
• Mix brown sugar with the cooled butter until smooth.
• Whisk in the eggs one by one, then the extra yolk, until creamy.
• Add vanilla and milk. It may look a bit separated at first, just keep mixing until smooth and no lumps remain.

3️⃣ Add the Dry Ingredients:
• Sift together flour, cornstarch, baking powder, and salt.
• Gradually fold into the wet mixture until smooth and lump-free. Don’t overmix; this keeps the muffins soft and fluffy.

4️⃣ Add Chocolate & Caramel:
• Fold in some chocolate chips.
• Fill muffin cups halfway, add a spoon of caramel in the center, and cover with more batter.
• Sprinkle the remaining chocolate chips on top.

5️⃣ Bake:
Bake at 180°C (350°F) for 25–27 minutes, until golden, soft, and slightly cracked on top.
Check the center with a toothpick , it should come out mostly clean with a few gooey crumbs.
Cool slightly before serving to let the caramel set, then enjoy warm and gooey! 🤎

💡 Tips & Notes:
✔ Let the brown butter cool until creamy , this is essential for flavor and texture.
✔ Use thick caramel or freeze it a bit before adding (don’t do like me 😅), otherwise it might sink to the bottom.
✔ As soon as you take them out of the oven, add a few extra chocolate chips on top ; they’ll melt beautifully and give that glossy, irresistible look! 🍫✨
