These amazing nachos are easy to make for one person...or 20! Vegan, gluten free and dairy free nachos! Less than 10 minutes from prep to table! Absolutely delicious. They will leave your mouth watering for more!

For one serving, you'll need:
12 gluten free tortilla chips
1/2 small yellow onion, diced
1 small tomato, diced
1/2 avocado, diced
handful of cilantro
1/2 cup lentils (drained if coming from a can)
1 tbls olive oil
salt and pepper to taste
1 tbls fresh lime juice
Can add cayenne or red pepper flakes to spice it up!
