Curry recipe:
Half of a jar of Patak's curry paste
2 peppers
1 can of chickpeas (rinsed)
1 can of coconut milk or cream
300 gr of chicken breast
handful of fresh or frozen spinach

Cut peppers in chunks and sauté them in the pan. While they cook, add the rinsed chickpeas to the pan, then dice the chicken and add it to the pan. Stir the ingredients and add half of jar of Patak's curry paste (my favourites are Jalfrezi or Madras) followed by 50 ml cold water. Mix everything well ensuring chicken, chickpeas and peppers are covered in paste. Fry it for few minutes. Add coconut milk, spinach and let it simmer until the sauce thickens and chicken is cooked through, but make sure not to overcook it (the peppers will get soggy). Serve with rice

Fake "raita"
Half of a cucumber
150 grams of a thick, creamy yoghurt
squeeze of a lemon
salt to taste

Grate the cucumber and squeeze the water out. Mix with yogurt, lemon and salt. I usually use about 1/3 of smaller lemon or 1/4 of larger one. Enjoy
