Pineapple Skin Tea Recipe
Yield: 64 oz

Ingredients:

Skins and core of 1 pineapple (thoroughly washed)
8-10 pimento berries
1 thumb-sized piece of fresh turmeric (sliced)
1 thumb-sized piece of fresh ginger (sliced)
1/2 tsp black pepper (to boost turmeric absorption)
10 cups (80 oz) water
Agave or honey, to taste
Instructions:

In a large pot, combine the pineapple skins, core, pimento berries, turmeric, ginger, and black pepper.
Pour in the water and bring to a boil over medium-high heat.
Once boiling, reduce the heat to low and simmer for 45 minutes to 1 hour, allowing the flavors to infuse.
Strain the tea into a large bowl or pitcher, discarding the solids.
Sweeten with agave or honey to taste while the tea is still warm. Stir well.
Serve hot, or let it cool and refrigerate to enjoy over ice.
Optional Additions:

A squeeze of lime for added brightness.
Mint leaves for a refreshing twist.
