In this video, I made an 8-layer coffee cake! I used the coffee cake roll recipe that Janet made in another video.

In this video, I used 9.5 X 9.5-inch pan, for each layer cake I used:
4 egg yolks
20g Sugar
30g olive oil
3 tablespoon espresso coffee or strong coffee, cooled (I used a decaf strong coffee)
65gm all-purpose flour
4 egg whites
70gm sugar

Coffee Buttercream Frosting
1 1/2 cups softened Butter in room temperature
3 cups confectioner's sugar
3 tablespoon coffee, cooled
2 tablespoon heavy whipping cream

Instructions:
Coffee Buttercream Frosting:
1. Place the butter in a large mixer bowl and beat on high speed for several minutes until light and fluffy.
2. Sift in 2 cups of the confectioner’s sugar and beat again, starting slowly until incorporated and then increase to a high until well-whipped.
3. Add the remaining confectioner’s sugar along with the cold coffee, and the Heavy whipping cream and mix slowly until just incorporated. Then increase the speed and beat well until whipped and creamy.
4. Spread or pipe onto your baked treats – cake, cupcakes, etc.

Coffee Cake:
1. Preheat oven to 350° F degree. Line baking pan with parchment paper, leaving about an inch of extra baking paper up the sides of the baking pan.
2. Beat egg yolks and sugar till well mixed and sugar has dissolved. Add in oil, cooled coffee and mix well.
3. Sift in flour and mix well. Set aside.
4. Beat egg whites using an electric mixer under low speed till whites turn foamy. Add in sugar
gradually in 3 additions and beat till slightly stiff peaks are formed.
5. Beat whites under low speed for one minute to get a smooth and fine egg white mixture.
6. Fold in the 1/3 of whites into the yolk's mixture. Mix well with a hand whisk. this is done to allow easier incorporation of the remaining egg whites when you fold in later.
7. Pour the mixture into the remaining whites and fold well using a spatula.
8. Pour into the lined baking pan and even out batter top.
9. Bake at 350° F degree for 20 minutes.
10. Remove lined baked cake from baking pan to cool on cooling rack.
11. Spread the coffee buttercream frosting evenly over on each layer cake with a spatula and shape the cake to what you want.
