Pastelle Pie
Ingredients
1 lb minced meat
1 lb minced pork
½ lb sausage
6 Tbs green seasoning
2 tsp salt
3 Tbs oil
2 medium onions diced
6 garlic cloves diced
6 Pimentos diced
3 tbs tomato paste
6 sprigs thyme
3 Tbs Capers
¼ cup Raisins
¼ cup Olives
4 cups corn meal
3 cups stock
3 cups water
½ cup olive oil
3 tbs salt
Banana leaves

Instructions
Place oil into a large sauté pan, add onion, garlic, and pimento, and sauté until softened. Add in meat and aromatics, and sauté until cooked. Add in tomato paste, capers, raisins and olives, mix to combine, set aside to cool.
Prepare cornmeal dough by adding cornmeal and salt to a bowl. Add in stock and oil slowly while mixing. Mix until dough is soft, but not sticky.
Prepare pastelle pie:
Soften banana leaves by singing over a low heat on stove, or placing in microwave for a minute. Line a baking dish with banana leaves, then place half of cornmeal dough at the bottom of the dish, then top with half of meat mixture. Continue layering with cornmeal and meat.
Cover with banana leaves, and place in oven for 45 mins.
