This turned out sooooo good and was really easy to make. Recipe and Where I got the things in the video are below.

Ingredients:
4 pieces of thinly sliced chicken breast
2 pieces of string cheese
3/4 cup shredded mozzarella
pizza sauce, to your liking. Use a little or a lot depending on how saucy you want it
parmesan
2 tbsp milk
1 egg
2 TBSP olive oil
cooking spray
1TBSP Italian seasoning
sandwich sliced pepperoni (8 slices)
1/2 cup bread crumbs

Spray an 8x8 or 11x7 baking dish with Pam and set aside. Preheat oven to 350.

Prepare chicken:
Lightly season one side of each breast with Italian Seasoning.
Place 2 pepperonis on top ef each breast.
Cut string cheese in 1/2 and place a half at the end of each piece.
Roll each breast up and secure with a toothpick making sure inside ingredients are tucked inside.

Combine egg and milk in one dish and bread crumbs and parmesan cheese in another.
Dredge each piece of chicken in the egg wash and then in the bread crumbs.

Heat a skillet on the stove and coat with 2 tbsp or so of EV Olive Oil.
Brown all sides of the rolled breasts just to get a nice crust all the way around.

Place the browned, rolled chicken into the greased baking dish. Squeeze or spoon pizza sauce on top of each piece of chicken. Top with Shredded mozzarella. Cover the dish with foil and bake until chicken is cooked to 165 degrees F using a meat thermometer. Mine took about 40 minutes in the oven.

Remove from oven and let it rest for a few minutes before slicing. Serve with side salad and garlic rolls.
