Mary is an excellent cook, and I always learn something each time when I talk to her. Mary is my model of what home cooking should be. She is in there for the long game, because she never stops learning and figures things out. She is constantly improving her cooking using a method similar to what I call Flavor Chasing as part of my FAST Cooking System. She applies general cooking principles to specific cooking situations. Consequently, she is among very few people whom I know to be able to cook almost anything she wants. She would taste something that she likes and reproduce it in her kitchen the next day. She then makes adjustments to make the dish to match her personal preferences. Consequently, she has an immense repertoire of dishes from all walks of the culinary world.
There are only one other person that I knew in my life possessing the same ability to cook food with such flexibility and imagination. Her name is Jade, who worked for our family when I was young. She was my childhood hero. She was wise and an exceptional cook. She was known as a culinary genius among the social circle of my parents. One most notable incident of her prowess as a cook has become a family legend. When my parents returned from a trip to Southeast Asia, they described a dish that they ate and loved to Jade. They wondered aloud whether she could make something similar. Several days later, this dish appeared on the dinner table. My parents were surprised beyond belief. Not only did this dish match their experiences they had on the trip, but they liked Jade's version even better. Jade understood cooking principles and could apply them to create desired flavors. However, more importantly she also knew my parents' taste preferences, and she could make the dish to match them. Looking back as I am cooking more and more, I start to appreciate both Jade and Mary for their understanding and ingenuity in the art of cooking!
