Dessert Wines Made from NOBLE ROT

The most prized and possibly also age-worthy sweet wines are made from botrytised grapes, also known as the Noble Rot. Botrytis Cinerea is a fungi that initiates grey rot, however, with the right conditions and right grape varieties, instead of turning grey and fluffy, grape dehydrates and the sugars concentrate, allowing to create these beautiful and lushes dessert wines.
