Ingredients:
1/2 cup Toor dal (yellow lentils) and moon dal-2 tbsp
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
1 carrot, sliced
1 drumstick (moringa), cut into pieces
1 small brinjal (eggplant), chopped
½ cup tamarind extract
coriander seeds-1 tbsp
fresh coconut- 2tbsp
methi seeds-1/4th tsp
jeera-1/2 tsp
cinnamon stick-1 inch
tomatoes-1
onion-1 small
curry leaves-few
potato-1 sliced
bottle gourd pices-1 cup
carrot-1/4th cup
mint leaves-2 tbsp
jaggery powder-1 tsp
½ tsp turmeric powder
2-3 dried red chilies
1 tsp mustard seeds
1 tsp cumin seeds
A pinch of hing (asafoetida)
1 sprig curry leaves
2 tbsp oil or ghee
Salt to taste
Fresh coriander leaves for garnish
Tips & Tricks:
Dal Consistency: Always pressure cook the toor dal until soft and mash it well. This ensures the sambar has a smooth and creamy texture.
Tamarind: Adjust the amount of tamarind extract based on your taste. Too much can make the sambar tangy, while too little can reduce its flavor.If you are run out of time store brought sambar powder works great too for this recipe.
Sambar Powder: For the best flavor, use homemade sambar powder. If using store-bought, go for high-quality brands.
Vegetables: Add seasonal vegetables like pumpkin, radish, or even okra for more variety.
Temper Properly: For the authentic hotel-style flavor, don’t skip the tempering (tadka) with mustard seeds, cumin seeds, and curry leaves at the end.
Simmering: Allow the sambar to simmer for 10-15 minutes after adding all ingredients. This helps the flavors meld together beautifully.
