easy flaky empanadas: yield 32pcs

Dough
250gms unsalted butter / one cup
4 cups / 480 gms all purpose flour
1tsp salt
1pc egg
260ml cold water / one cup add about 3/4 quantity then add a little bit until desired texture

note: add sugar to your taste if you want a sweet pastry

Pork filling
1 kl minced pork / 2.2 lbs
1pc medium brown onion
2 cloves garlic
400gms raw potatoes / one cup or two medium sized
200gms / 1 cup mixed corn, carrot and green peas
4Tbsp tomato paste
4Tbsp soy sauce
4Tbsp oyster sauce
1 pc chicken buillon cube (and yes, I used chicken buillon because I like the flavour)

note: adjust seasoning to your taste

4Tbsp oil
Salt and pepper to taste

***Raisins (optional)***

One cup of butter is nearly 250 gms of butter or if you read the packaging it's usually indicated on it ( some countries sell 200gms some 250 gms) or 2 sticks of butter would be the conversion. Then veggies would be around one cup also. Potatoes approximately 2 medium sized.


You can also bake them at
180 degrees Celsius for about 25
minutes or until golden brown...don't
forget to eggwash the empanadas
before baking. Enjoy!
