Today I am going to show you how to make my Sweet Potato Black Bean Salad, Gluten Free of course!
This Salad is great for lunch or add some grilled chicken to make it a light dinner!!
The dressing is so easy to make and delicious!! The ranch seasoning mix recipe is here on my channel and in my cookbook! I will add it below, so you don't have to go searching for it!
Tortilla chips broken in pieces make a nice crunchy topping to this salad, I forgot to add them, even though I mention something like toasted pumpkin seeds to add crunch lol!

Ranch Seasoning Mix-

For the Spicy Ranch Dressing:
2 Tbsp Ranch Seasoning mix (recipe above)

1 cup Mayonnaise
1 cup Milk
1 Tbsp Cilantro
Add all ingredients in a mason jar, shake well.

For the Sweet Potatoes:
2 medium Sweet Potatoes, chopped

Oven 400 F. Toss potatoes, oil and seasonings well, spread in an even layer. Bake until crispy on the outside and soft in the middle, stirring about every 15 minutes or so.

For the Salad:
