In this video, we show you some Healthy Vegetable Roti Ideas. We made Rainbow Rotis using Spinach, Beetroot and Carrot but the best thing about this recipe is that you can use almost any vegetable of your choice! These Vegetable Rotis (also known as Chapati) are super healthy and you seriously won't be able to taste any difference between these and regular roti. This makes the Vegetable Roti perfect for children and those people that don't get enough vegetables in their diet.

These Healthy Rainbow Vegetable Rotis are full of fibre, vitamins and all the goodness you would get from the vegetables. They are super soft and you can serve these vegetable chapati's with any curry or dish of your choice. You can add some butter or ghee on top if you wish.

To make the Healthy Vegetable Roti you will need:
Vegetables of your choice. We used Carrots, Beetroot and Baby Spinach. Grind the vegetables with a splash of water, just enough so that it forms into a puree.
Form the dough with 1 cup vegetable puree and 1 cup chapati flour. We always use multigrain chapati flour at home as its healthier but you can use any chapati flour of your choice.
Add salt to taste, or you can completely leave out if you wish.
Cook the Roti as you normally would on a Tawa or Pan.

You can be creative and use any vegetables of your choice. You can't taste that you're eating any vegetables but you're getting the added benefits and nutrients from all the veggies!
