I PROMISE! This is the most delicious roasted leg lamb EVER!!

For this slow-cooked roasted lamb leg I have made a delicious spiced butter and rubbed the lamb in it. Alternatively, you can use oil instead of butter. Definitely a little healthier but hey, you only live once! Add some deep incisions to the lamb leg with your knife so that as it's roasting it soaks up all that butter and spice goodness.

I have used salt, pepper, cumin, turmeric powder, smoked paprika, cayenne (for a little spice), garlic and softened butter. Simply mix them all together and you have a delicious spice blend EVER that is perfect for rubbing on any meat.

Now spread the mixture over the entire leg or shoulder of your lamb, cover and refrigerate it overnight. (This will enable the meat to absorb all the flavours).

The next day:

• Set the oven temperature to 220°C

• Place lamb in a roasting pan and cover with foil, sealing edges tightly.

• Roast the meat for an hour to 220°C

• After an hour of roasting reduce the heat to 180°C and let it cook for another 3 hours.

• Transfer lamb to a platter and allow it to rest for 20 minutes before serving. If desired, pour juices over and around lamb.

• For a colorful presentation, garnish platter with an assortment of salads or roasted or grilled vegetables.

Tip: Sometimes I like to make a sauce to serve with the lamb, too. Reserve the cooking juices from the roasting pan and add 1 spoon of flour, a little bit of brown sugar and 1 tablespoon balsamic vinegar. Bring to a gentle simmer until the sauce is thickened. Season to taste with salt and freshly ground black pepper.
