Описание к видео Vegan - Rich Chocolate Cake with Coconut Cream Ganache (and cherries baked in)

RECIPE!!! First video since I moved to NYC! Got married here in May and for now that's where we are staying! We live with my mother in law, her kitchen is so small, i have to work with what i have right now, her utensils and tools, until i adjust and organize my section in the kitchen for my videos! Forgive the simplicity and messiness of this video, haha, hopefully my hubby made it a little more enjoyable for you ;) He's so natural!! Don't let the simplicity of this cake fool you though, it's to die for!!! This cake batter can also be used for cupcakes and muffins, it's really delicious!!! My hubby loves cherries and chocolate together, so since it was his birthday I added frozen cherries in the batter, and chopped chocolate to make my man happy :D The best part is that it's so easy to make. Here's the recipe for yall:

RECIPE

Dry ingredients:

190gr Brown sugar
1/2 tsp Salt
33gr Cocoa powder
200gr All purpose flour
1/2 tsp Baking soda
1 tsp Baking Powder (Double acting works best for Vegan recipes)

Wet Ingredients:

63gr Vegetable Oil
100gr Filtered Coffee
100gr Water
12gr White Vinegar
15gr Vanilla extract

Ganache:

100gr semi-sweet dark chocolate
1 small can of Coconut Cream (160ml for a single layer cake like this one... more if you are making a triple layer :D )
touch of oil

Method:

Combine ALL dry ingredients into a bowl. (To save time, you can SIFT all dry ingredients instead of whisking it or using your hands like i am doing here to break the brown sugar lumps).
In a jar combine ALL liquid ingredients. Then add them straight to the dry and mix until smooth.

*At this point you can use this batter and make cupcakes, muffins or cake. You can make this cake in a triple layer but make sure the ganache is cool enough to spread in between the layers. We were so eager to eat his cake so i did everything in a hurry :P But I really wanted to share this recipe with you guys, it truly is delicious!!

I added a full mug of frozen pitted cherries and 100gr of chopped dark chocolate. Fold them in and pour the batter in a sprayed pan, or place a cut out parchment (i used a 10in pan I wanted a thin layer of cake, it's only 3 of us here :P but you can use an 8in and have a taller cake)

Bake the cake in a preheated 325 F oven, for about 35-40 min (for a thin layer; more if its taller) or until an inserted toothpick comes out clean!

Meanwhile melt the chocolate into the coconut cream over low heat. Add a few drops of oil to give it a shinier look!! Let COOL at room temparature.

Ideally you would spread the ganache on top once it's cooled, but you can use it warm and pour it all over the cake, just not too warm like i did here! Please learn from my mistakes, hehe!

Sprinkle some chocolate shavings on top, and a few fresh cherries to garnish! Hope you ENJOY!!!!
