最簡單骨膠原
簡易炆牛筋

材料:
急凍牛孖筋3磅半

處理:
1. 牛孖筋,清水解凍。
2. 開大火,預備1鑊水,放牛孖筋落鑊。
3. 加入:
a. 粗鹽1湯匙
b. 米酒20毫升
在鑊內,大火滾至起泡,清水沖洗乾淨。
4. 牛孖筋,切開一條條。

烹調:
1. 大火在鑊內燒熱油1湯匙。
2. 放牛筋落鑊,爆香1分鐘至金黃色。
3. 轉慢火。
4. 加入調味料:
a. 蠔油3湯匙
b. 生抽2湯匙
c. 紹興酒3湯匙
轉大火,炒勻。
5. 另一邊,大火煲滾1鑊水。
6. 轉慢火,加入冰糖2大粒在牛筋內,炒勻。
7. 轉大火,加入大滾水在牛筋內,蓋過面多一吋,大火滾5分鐘。
8. 轉中火,炆牛筋1小時。
9. 牛筋,炆了45分鐘,熄火,焗半小時,切勿打開蓋。
10. 過了半小時,檢查牛筋是否夠腍。
11. 開大火,加入大滾水300毫升,滾起,轉中慢火,炆牛筋15分鐘。
12. 牛筋已炆腍,灑上辣椒及芫荽碎。
13. 完成,上碟,可享用。

Braised beef tendons (simple method)

Ingredients:
Frozen beef tendons 3.5 lbs

Preparation:
1. The tendons, defrost in tap water.
2. High flame, prepare a wok of water. Put tendons in wok.
3. Add in:
a. Cooking salt 1 tbsp
b. Rice wine 20ml
In wok, heat up at high flame until bubbles arising. Rinse thoroughly.
4. The tendons, cut in stripes.

Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Put tendons in wok, fry for a minute until it turns in the colour of golden yellow.
3. Turn to low flame.
4. Add seasoning:
a. Oyster sauce 3 tbsp
b. Light soya sauce 2 tbsp
c. Shaoxing wine 3 tbsp
Turn to high flame, fry well.
5. On the other side, heat up a wok of water at high flame.
6. Turn to low flame, add in 2 big cubes of rock sugar in the tendons. Fry well.
7. Turn to high flame, add in boiled-up water in the tendons, just cover them up for an inch. Braise at high flame for 5 minutes.
8. Turn to medium flame, braise the tendons for an hour.
9. The tenfons, has been braised for 45 minutes, turn off fire. Leave it for half an hour. Do not open the lid.
10. Check the tendons if they are soft enough after half an hour.
11. Turn to high flame, add in 300ml of boiled-up water. Heat them up. Turn to medium-low flame, braise the tendons for 15 minutes.
12. The tendons have been softly braised, put chili and coriander cubes on top.
13. Complete. Put on plate. Serve.
