Basic Malvani Gravy & Malvani chicken Curry by chef Sunil Singh |

Ingredients-
Oil 300 ml
Jeera 3 tbs
Clove 20-25
Star anise 8-10
2 tbs black pepper corn
18-20 green cardamom
4-6 green cardamom
8-10 bay leaf
4-5 cinnamon sticks
Fenugreek seeds 10 grm
Coriander seeds 50 grm
2 tbs fennel seeds
1 tbs mustard seeds
Whole Kashmiri chilli 50 gram
Khas khas 1/2 cup (optional)
Kabab chini 1 tsp (optional)
Garlic 100 grm
Ginger 70 grm
Onion roughly cut 700 grm
Green Chilli 60 grm
Handful curry leaves
Fresh coconut 300 grm
Sauté all ingredients and paste it.

For Malvani gravy tempering
200 ml oil
Ginger garlic paste
Salt to taste
1 tblspoon Kashmiri red chilli powder
Cook gravy until reduced one third.

For Malvani chicken curry-
5 chicken drumsticks
1 tblspoon ginger garlic paste
1/2 tbs red chilli paste
1/3 tbs green chilli paste
Salt to taste
Pinch of turmeric powder
2 tbs oil

Fort Malvani chicken curry gravy-
oil 2 tbs
1 tbs garlic chopped
1 medium onion fine chopped
Pinch of turmeric powder
Pinch of Kashmiri red chilli powder
Malvani Gravy 100 grm
Salt to taste
Pinch of coriander powder
Pinch of garam masala
Pinch of Sunday masala
Pinch of cumin powder
1 cup hot water
Add cooked chicken
Some fresh coriander chopped
